For today, we have muffins. Mini muffins. Goodness, we love these muffins.
Easy, quick, delicious and my kids just really like the fact that they are mini. These are great for breakfast or a snack. Made with really simple ingredients that are probably in your pantry as we speak!
Give them a try and if you aren’t able to make them mini, making them regular size will work fine too. Just increase your baking time a few minutes.

INGREDIENTS
- 1/2 cup (1 stick) butter, softened
- 1/2 cup sugar
- 2 eggs
- 3/4 cup unsweetened applesauce
- 1 3/4 cup Flour
- 1 tsp baking soda
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1 tsp vanilla
- 1 tsp ground cinnamon
FOR TOPPING:
- 1/2 cup (1 stick) butter, melted
- 1/2 cup sugar
- 2 tsp ground cinnamon
INSTRUCTIONS
- Preheat oven to 350 degrees. Grease a 24 count mini muffin pan or line with cupcake liners.
- In a bowl, whisk together flour, baking soda, baking powder, salt and ground cinnamon. Set aside.
- In a mixing bowl, beat butter with sugar until fluffy. Then, add in eggs, vanilla and applesauce. Mix until combined.
